Icing and Decorating Tips

Carrot Cake- Cream Cheese Icing

Cream Cheese icing is one of our favourites- follow our hot tips to get the yummiest icing for your carrot cake!

Ingredients

  • 113g unsalted butter softened
  • 226g cream cheese not spreadable- VERY IMPORTANT, do not use lite or low fat cream cheese this must be full fat!
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 500g Icing sugar

Instructions

  • Combine soft butter and cream cheese in the bowl of a stand mixer (or you may use an electric mixer) and beat until creamy, well-combined, and lump-free.
  • Add vanilla extract and salt and stir well to combine.
  • With mixer on low, gradually add powdered sugar until completely combined, watch carefully do not over mix or your icing will come out runny!
  • Use to frost completely cooled cake or cupcakes. See videos on frosting tips!

Carrot Cake- Buttercream Icing

  • Buttercream is our second favourite icing to use for our carrot cake- Bonuses of using buttercream is that it hardens in the fridge, making the cake stable and easy to transport. For our wedding cakes we usually fill the inside of our carrot cake with cream cheese icing then wrap the outside in buttercream to create stability. Check out our video on how to do this below!

Ingredients

  • 250g unsalted butter softened
  • 500g cups powdered sugar
  • 1 Tablespoon pure vanilla extract
  • 4-5 Tablespoons heavy cream or whole milk

INSTRUCTIONS

  • Beat the softened butter over medium/high speed with an electric mixer until soft and creamy. To create the desired texture beat the butter for an extended period of time, you should see the butter start to turn white in colour this is the desired outcome. This can take up to 10 minutes beating on medium to high.
  • Continue to beat over low speed as you gradually add the icing sugar. Stop the mixer and scrape down the sides of the bowl with a spatula as needed to fully incorporate all of the sugar.
  • Once butter and sugar have come together, add the vanilla. Beat in the heavy cream or milk 1 Tablespoon at a time until a soft smooth consistency is reached.
  • This frosting is perfect for piping, or for simply spreading onto cakes and cupcakes!

FLOWER DECOR

Below are some of my favourite choices from the garden to decorate with!

When using flower decor always check to see if the flower is poisonous before placing into the cake, If using potentially toxic flowers stems will need to be wrapped with special flower tape to prevent any contamination.

Otherwise use freely to decorate the top of your cake, fresh flowers will last a good couple of hours in a cake, I like to pick mine the evening before, wash in cool water to rid any hiding insects and leave to sit in water overnight. Before decorating I have a good inspection to insure no insects are hiding then I place into my cake. Once fully decorated the cake is stored in the fridge until pick up or consumption.
